Abstract: The aim of this work was to perform tests of inhibition of enzymes involved in digestion of carbohydrates (α-amylase and α- glucosidase) and lipids (lipase pancreatic) using the white bean flour (WBF), in order to detect inhibitors and to verify the stability of these in relation to simulated gastric fluid, and a toxicological screening analysis by hemolytic activity. After simulation of gastric fluid the enzymes α-amylase and α-glucosidase were inhibited by WBF, revealing a potential of reduction of the absorption of carbohydrates in the diet, and consequently an adjunct to treatment of obesity and diabetes. Additionally, there was no hemolytic action in preliminary toxicity tests.
