Resumo: The mushrooms are prized for their nutritional and therapeutic properties become attractive as a functional food and as a bioactive compounds source. This study aimed to evaluate the crop cycle of Lentinula edodes strains from the production of enzymes, lectin and β-glucan and to assess the intake of cellulose, hemicellulose and lignin and the mushrooms productivity, as well as the centesimal composition, antioxidant activity and the content of lectin, laccase and tyrosinase. The results showed an increase in lectin content and laccase in the pigmented mycelium. The tyrosinase production was increased in brown mycelial cover. The β-glucan content for all strains suffered variations throughout the cycle. The strains showed different capacities to consume cellulose, hemicellulose and lignin. The strains UFLA-LE4 and UFLA-LE6 were the most productive with productivity of 26.9% and 26.2%, respectively. The strain UFLA-LE2 showed higher crude protein (30.71±0.82%) and ash (5.49±0.23%), UFLA-LE3 higher lipid content (3.14±0.14%), UFLA-LE6 higher fiber content (16.40±0.20%) and UFLA-LE5 higher carbohydrate content (66.59±0.90%). The strain UFLA-LE4 showed higher antioxidant activity (53.0±0.1%). The strains UFLA-LE3 and UFLA-LE6 showed greater lectin activity (32 UH 50µL-1). The laccase activity was higher for the strain UFLA-LE6 (13.78±0.62 U kg-1). It was not detected tyrosinase activity on mushroom in any strain. As the strain UFLA-LE4 showed higher antioxidant activity; the strain UFLA-LE2 showed higher content of protein and ash and lower lipid content; and the strain UFLA-LE6 stood out as the most nutritional parameters, lectin activity and higher productivity in mushrooms, these strains can be selected for future breeding projects.
