Abstract: The objective of this research was to study the profitability of milk business in milk production systems in the region of Lavras/MG, analyzing the influence of the sort of labor upon the production cost of milk. In addition, it was intended to identify the components that had the greatest influence on the final costs of the business and the breakeven point. The data utilized were from 17 milk production systems allocated in one of three types of labor (familiar, mixed and hired), monthly collected from January 2004 to December 2005. The electronic data processing as well as the profitability analysis were proceeded by the Custo Bovino Leite software, considering the gross margin, the net margin and the result (profit or loss) as indicators of economical efficiency. The sort of labor influenced the total milk cost production, and therefore, the rentability and the profitability, being the systems of hired labor production the ones that presented the lowest total unit costs, as well as a positive result. The production system with hired labor for presenting positive result, it´s concluded that milk business has conditions of producing in the long term and the dairy farmers have been capitalizing. Therefore, the ones who used mixed labor, have conditions to produce in the middle term for getting positive net margin. The ones with familiar labor not even could get over the expenses with the effective expenses. The sort of labor influenced the “weights’’ of the items composing the effective operational cost of dairy business, being these different in each of the three studied sorts.
