Resumo: The sugarcane industry is responsible for the generation of different types of waste, such as vinasse and molasses, that in most cases, are not adequately treated and disposed causing environmental problems. In recent years there has been an increased interest in biotechnological processes that allow the production of high value-added products from agro-industrial waste mitigating the inadequate disposal on the environment. In this way, the aim of this work was to evaluate the impact of vinasse supplementation with molasses in biomass and volatile compounds production by yeast. The fermentation was carried out by five yeast strains (Saccharomyces cerevisiae CCMA 0186; S. cerevisiae CCMA 0188; Candida parapsilosis CCMA 0544; C. glabrata CCMA 0193; Pichia caribbica CCMA 0198) in two medias containing vinasse and molasses in proportions of 50:50 and 70:30 (v/v), respectively. Microbial biomass production, nutritional characteristics of biomass and production of volatile compounds during the fermentation process were evaluated. Physico-chemical characteristics and subchronic toxicity of medias, as well as the impact of wastes on yeast cellular morphology were also determined. The highest biomass and volatile compounds production occurred in the tests with strain Candida parapsilosis CCMA 0544. The highest production of biomass corresponding to 8.8g in medium 1 and 7.60g in medium 2, while the highest production of volatile compounds corresponding to 1.26g/L and 3.87g/L of 2-phenyl ethanol in medium 1 and 2, respectively.
