Abstract: The peach is a native fruit from China with the first records of its incidence indicating 20 centuries B.C.. Asia is in the world bigger producer of peach fruit, in that way China is the country that produces the most, in Brazil, the southern states concentrate 74% of production national. Understanding the development of this fruits is extremely important for a better management before and after harvesting, thus nonlinear regression models can be a great ally for researchers and products, since these models have practical interpretation of their parameters, being helpful to understand in a more objective way the phases of the growth of this and other fruits. The objective of this study was to characterize, using nonlinear regression models, the development of peach fruits in the medium and long cycle. As pegged in the literature for peach growth, peach fruits shows a double sigmoid growth curve, with the double Logistic model being the most suitable for the long cycle and the double Gompertz for the medium cycle.
