Abstract: The objective of this study was to evaluate the physical and chemical characteristics of dried tomatoes acquired in the city of Belo Horizonte (Minas Gerais - Brazil). Eight different products were evaluated, determining the mass of the slices, the centesimal composition and minerals content. The moisture of the products varied from 39.2 to 66.6 %. Half of the dried tomatoes presented pH value over 4.5 and only the product C showed SS/ TA ratio inferior to 10. The dried tomatoes presented high values for: calories, carbohydrate, lipid and fi ber, magnesium, copper, iron and potassium. Except for product A, the dried tomatoes presented an excessive level of sodium varying from 620.1 to 1956.8 mg.100 g-1 . Despite their high nutritional value, dried tomatoes also present high sodium and caloric contents.
