Abstract: The marmelada-de-cachorro (Alibertia sessilis Schum.) is a typical fruit of the Brazilian Savanna, but little explored, whether by the local population or the scientific community. The objective of this study was to evaluate the use of this fruit in the form of fruit jam, sweet, fruit in syrup and nectar. Analyses of chemical composition, pH, soluble solids and total titratable acidity was performed, as a characterization of the products developed. The products had low levels of protein, ash and lipid content in addition to high levels of carbohydrates and total energy, similar to commercial products derived from fruits. Therefore, the marmelada-decachorro proved to be applicable to industrialization in the form of sweets and drinks, adding value to the fruit and spreading it to other regions of the country.
