Abstract: Manufacturing jellies by processing the fruit peel is an alternative for reducing and adding value to the waste from food industries. In addition, a pleasant sensory and long-lived product is achieved. As in Brazil occurs varied temperatures according to the country regions, the objective of this study was to evaluate the effect of temperature changes on the physical-chemical, physical and chemical characteristics during the storage of jellies made from banana peel. The storage of this product at different temperatures caused significant difference in the stability of reducing sugars, water activity and luminosity. The interaction of time versus temperature affected the pH, soluble solids, adhesiveness, firmness, cohesiveness and color b* (yellow) parameters on the banana Prata peel jelly by the end of 165 days of storage. The time length was the factor which mostly affected on the jelly quality, water activity, moisture, non-reducing sugars, luminosity, adhesiveness absolute value, product firmness, and also caused an increased acidity.
