Resumo
No presente trabalho foram avaliados o perfil de ácidos graxos e colesterol do músculo (longissimus thoracis) e da gordura subcutânea de bovinos dos grupos genéticos Nelore (n=67) e Nelore x Simental (n=67), terminados em sistema intensivo (n=94) e extensivo (n=40), abatidos com peso médio de carcaça de 264 a 305kg e idade de 24 a 28 meses, respectivamente. No contexto das 51 variáveis estudadas na gordura intramuscular, 40 (78,4%) foram afetadas (P<0,05) pelo sistema de terminação, 20 (39,2%) foram afetadas (P<0,05) pelo efeito do grupo genético, 11 (21,6%) mostraram interação (P<0,05) entre os fatores. Quantidades superiores dos ácidos graxos C14:0, C16:0, C18:0, AGS, AGS ind.-C18:0, C18:1 cis-11, C18:1 cis-12, C18:1 cis- 13, C18:1 trans-10, C18:1 trans-11, C18:1 trans-16 cis-14, AGM trans,C18:2n-6, e n-6/n-3 foram oriundas do sistema intensivo, e C16:1cis-7, C16:1 cis-9, C17:1 cis-9, C18:1 cis-9, C18:2 cis-9 trans-11, AGM cis-9, C18:3n-3, C20:5n-3, C22:5n-3, AGP, AGP n-3, P/S e 9 dessaturases foram oriundas do sistema extensivo (P<0,05). Os animais Nelore apresentaram valores superiores aos ácidos graxos C14:0, C14:1 cis-9, C16:1 cis-9, C18:1 trans -16 cis-1, C18:2 cis-9 trans-1, elongase, 9 dessaturase geral, 9 dessaturase (C14), 9 dessaturase (C16) e índice aterogênico (P<0,05), possivelmente decorrente de maior atividade da elongase, associada com menor atividade da 9dessaturase no sistema intensivo. Os animais Nelore x Simental apresentaram altas concentrações de C16:0, 18:2n-6, C20:4n-6, AGP e AGP n-6 (P<0,05). Observou-se na gordura subcutânea, entre as 52 variáveis respostas estudadas, 41 (78,8%) foram afetadas (P<0,05) pelo sistema de terminação, 20 (38,5%) foram afetadas (P<0,05) pelo efeito do grupo genético e 5 (9,7%) mostraram interação (P<0,05) entre os fatores. Os animais do sistema intensivo mostraram altas quantidades de colesterol, C17:0, C18:0, c18:1 cis-11, C18:1 cis-12, C18:1 cis-15, C18: trans- 6, 7, 8, C18:1 trans-19, C18:1 trans-10, C18:1 trans-12, C18:1 trans-16 cis-14, AGM C18:2 n-6, AGP, AGP n-6, n-6/n-3, P/S, e elongase. As altas quantidades de colesterol e AGM trans possivelmente estão associadas à dieta. Nesse contexto, os dados sugerem que a gordura intramuscular apresentaram perfil de ácidos graxos nutricionalmente melhor que a gordura subcutânea e que a gordura intramuscular, oriunda de animais do sistema extensivo apresentaram perfil de ácidos graxos mais adequado para dieta humana do que os animais do sistema intensivo.
In this study were evaluated the fatty acid profile and cholesterol content of muscle (longissimus thoracis) and subcutaneous fat of Nelore (n=67) and Nelore x Simmental (n=67), finished in intensive system (n=94) and extensive system (n=40), slaughtered at average carcass weight from 264 to 305kg and age from 24 to 28 months, respectively. In the context of the 51 variables studied in the intramuscular fat, 40 (78.4%) were affected (P<0.05) by finishing system, 20 (39.2%) were affected (P<0.05) by the genetic group and 11 (21.6%) showed an interaction (P<0.05) among factors. Higher amounts of fatty acids C14:0, C16:0, C18:0, AGS, AGS ind.-C18:0, C18:1 cis-11, C18:1 cis- 12, C18:1 cis-13, C18:1 trans-10, C18:1 trans-11, C18:1 trans-16 cis-14, AGM trans,C18:2n-6, and n-6/n-3 were derived from the intensive system, and C16:1cis-7, C16:1 cis-9, C17:1 cis-9, C18:1 cis-9, C18:2 cis-9 trans-11, AGM cis-9, C18:3n-3, C20:5n-3, C22:5n-3, AGP, AGP n-3, P/S and 9 desaturases have been derived from extensive system (P<0.05). The Nelore showed higher fatty acids values C14:0, C14:1 cis-9, C16:1 cis-9, C18:1 trans - 16 cis-1, C18:2 cis-9 trans-1, elongase, 9 overall desaturase, 9 desaturase (C14), 9 desaturase (C16) and atherogenic index (P<0.05), possibly due to greater activity of elongase associated with lower activity of 9 desaturase in intensive system. The animals Nelore x Simmental showed high concentrations of C16:0, 18:2n-6, C20:4n-6, AGP and AGP n-6 (P<0.05). It was observed in the subcutaneous fat, among 52 response variables studied that, 41 (78.8%) were affected (P<0.05) by finishing system, 20 (38.5%) were affected (P<0.05) by the genetic group and 5 (9.7%) showed an interaction (P <0.05) among factors. The animals of intensive system showed high amounts of cholesterol, C17:0, C18:0, c18:1 cis-11, C18:1 cis-12, C18:1 cis-15, C18: trans- 6, 7, 8, C18:1 trans-19, C18:1 trans-10, C18:1 trans-12, C18:1 trans-16 cis-14, AGM C18:2 n-6, AGP, AGP n-6, n-6/n-3, P/S, and elongase. The high amounts of cholesterol and AGM trans probably are associated to the diet. In this context, the data suggest that intramuscular fat showed fatty acid profile nutritionally better than subcutaneous fat and intramuscular fat, derived from animals of extensive system showed fatty acid profile more suited to the human diet that the animals in intensive system.
