Cachaça sob uma perspectiva histórica, cultural e simbólica

Abstract

It is the purpose of this theoretical essay to understand how the process of institutionalization of cachaça in Brazil occurred in relation specifically to their production histories and market insertion highlighting the social and cultural effects over time. The main results show that the drink exists since the Brazilian colonial period, but only in recent years the cachaça sector has been organized and recognized institutionally. Nevertheless, producers have found many challenges to regularize and standardize the production process according to the requirements of the current political context and cultural partner.
